Let's talk pendant lights. . .

I'm planning a bathroom remodel (budget pending!) so naturally I've been spending all my time on Pinterest, pinning things for the bathroom because that's productive, right? I have a strange hanging light in the center of the bathroom right now and I wanted to replace it with a cool pendant light. After discovering this little gem on Pinterest, I am obsessed...


It's called the Barbara Barry Simple Scallop Pendant...and it's $630 dollars, darn it! I love how it looks in all these rooms. Bathroom, Kitchen, it looks good everywhere!

I've been searching for a more affordable option but haven't come across much yet. I did find this gorgeous pendant on sale because it's an opened box, but it's still over $200, tempting, but I'm not sure it's going to work with the budget. The black piping is a nice touch.

I'm going to keep searching for more budget friendly options, but I may have to just go with a basic drum shade pendant. So that's my Pinterest obsession lately, have you guys stumbled across any good finds on there lately?

In the Kitchen: "Healthy" Buffalo Chicken Dip

Oh buffalo sauce, how do you make everything so delicious? I'm a big buffalo wing lover and with all the hot buffalo sauce inspired recipes out there, it was time I tried to make one of the dips. This is a lighter version than most, I don't know if you can call it "healthy" but it is definitely lightened up by using low-fat sour cream, cream cheese and shredded cheese.

The recipe was adapted from here. One key thing I changed was adding blue cheese, whats a buffalo chicken recipe without blue cheese thrown in there? This recipe is perfect for parties, always a hit! Not to mention, so easy to make. And to keep it on the lighter side you can serve it with carrots and celery in addition to chips.

INGREDIENTS
2 chicken breasts, shredded
2 packages (8 oz each) of low-fat cream cheese, softened
1 cup low-fat sour cream
3/4 cup Frank's Red Hot Buffalo Sauce
1 teaspoon garlic powder
1.5 cups shredded cheese, I used half mozzarella, half chedder
1 small package of blue cheese crumbles
Tortilla chips, carrots and celery for dipping

PREPARATION
Preheat oven to 350 degrees. Mix all ingredients together, except for a half cup of the shredded cheese and a quarter of the blue cheese crumbles.



Transfer to a baking dish, I used an oval shaped Le Cruset, about the equivalent of of an 11x8 pan. Sprinkle reserved cheese over top.



Bake for about 15 minutes, then turn on the broiler for a few minutes to slightly crisp up the top and get that golden brown color on the cheese. YUM.


The dip turned out great and is so simple to make! I would definitely love to try a slow cooker version, because the dip is best when it's kept warm. If you love Buffalo inspired dishes as much as I do, you may also want to try the Buffalo Sloppy Joe's recipe -- definitely delicious but a bit healthier than this dip!

Made in America: 4th of July Fashion Edition

Have you ever noticed how hard it is to find cute, Made in America clothes that don't cost a lot? Almost verything at stores like Forever 21, Ann Taylor Loft, Gap, etc. are generally imported so it can be really frustrating when looking for cute, reasonably priced things that are also made right here in America. I stumbled on a shopping site called Sosie and was completely surprised to find cute, well-priced items Made in America!

Monday, Monday . . .

Oh Monday, how I despise you after a long vacation. To be back in my desk under this flourescent lighting after a week of beach and sun is nothing short of painful. Ugh, anyone else having a little bit of a rough Monday?

My family rented a cottage on Lake Michigan last week and it was Pure Bliss (in Pure Michigan of course). I am so happy waking up to the gorgeous lake and spending long days in the sand, who wouldn't be? Our cottage was great and the Lake was right out our backyard. I'll be back with a full vacay post later, as usual sis took tons of great pictures!
